As the beans take longer to mature, they develop even more flavour and aroma. <br>In addition to the benefits of organic farming, another distinguishing feature is the way the coffee bushes are positioned within the plantation - they do not stand row-to-row, but are interspersed with various 'shade-trees'. These regulate the moisture content of the soil to combat dehydration and to protect the coffee bushes from the full glare of the sun.<br/><br/>
