Salmon
Organic Smoked Salmon from the artisan smokehouse of Geraldine Bass in Buttevant, Co Cork.
Her Organic Salmon are reared in the clearwaters of the Atlantic Ocean, 6 kilometres off the coast of Co Mayo. The high water movements generate strong water currents against which the salmon are compelled to swim. Such strong exercise results in fish with a firm flesh and a lower than average fat content.
Geraldine smokes the fish slowly, bringing out a subtle but distinctive flavour.
The salmon is sliced and vacuum packed and is available in 100gm, 200gm and 1kg (Side) weights.
